USA – Five people hospitalized in E. coli O157 outbreak at the University of Arkansas

Health officials are investigating an outbreak of E. coli food poisoning among students at the University of Arkansas, with dozens reporting symptoms and five people needing treatment in the hospital.

Among those affected are two 19-year-old sorority members who developed a serious complication that can lead to kidney failure after being infected with the E. coli strain O157:H7. That’s according to Bill Marler, a Seattle food safety lawyer who said he reviewed the patients’ medical records after being contacted by the families.

Norway has two sick in Spanish botulism outbreak

Norway has reported two cases that are part of a botulism outbreak in Spain, bringing the number of people affected to 11.

There is a link between patients and different packaged brands of Spanish omelet (tortilla de patata), which is made with potatoes and eggs, purchased in various supermarkets in different regions.

The Norwegian cases stayed in Barcelona between July 10 and 23.

For reasons of preventive consumer protection, dm drogerie markt is recalling the item “dmBio raspberry rice cakes from the 8th month, 35 g”. The item was immediately withdrawn from sale. Only goods with the best before date (MHD) 04.06.2024 batch “NL 157” are affected. This information can easily be found on the back of the packaging.

Reason for the recall: It cannot be ruled out that individual packs with the above MHD contain increased aflatoxin levels . These substances can impair health if ingested over a long period of time. Aflatoxins are metabolites formed by various molds.

Customers are asked not to consume the product with the above-mentioned BBD and to return it to the dm branches unopened or already opened. The purchase price will of course be refunded, even without presenting the receipt.

Research – Dynamic Modelling to Describe the Effect of Plant Extracts and Customised Starter Culture on Staphylococcus aureus Survival in Goat’s Raw Milk Soft Cheese

Abstract

This study characterises the effect of a customised starter culture (CSC) and plant extracts (lemon balm, sage, and spearmint) on Staphylococcus aureus (SA) and lactic acid bacteria (LAB) kinetics in goat’s raw milk soft cheeses. Raw milk cheeses were produced with and without the CSC and plant extracts, and analysed for pH, SA, and LAB counts throughout ripening. The pH change over maturation was described by an empirical decay function. To assess the effect of each bio-preservative on SA, dynamic Bigelow-type models were adjusted, while their effect on LAB was evaluated by classical Huang models and dynamic Huang–Cardinal models. The models showed that the bio-preservatives decreased the time necessary for a one-log reduction but generally affected the cheese pH drop and SA decay rates (logDref = 0.621–1.190 days; controls: 0.796–0.996 days). Spearmint and sage extracts affected the LAB specific growth rate (0.503 and 1.749 ln CFU/g day−1; corresponding controls: 1.421 and 0.806 ln CFU/g day−1), while lemon balm showed no impact (p > 0.05). The Huang–Cardinal models uncovered different optimum specific growth rates of indigenous LAB (1.560–1.705 ln CFU/g day−1) and LAB of cheeses with CSC (0.979–1.198 ln CFU/g day−1). The models produced validate the potential of the tested bio-preservatives to reduce SA, while identifying the impact of such strategies on the fermentation process.

Research – Risk Factors for Non-O157 Shiga Toxin–Producing Escherichia coli Infections, United States

Abstract

Shiga toxin–producing Escherichia coli (STEC) causes acute diarrheal illness. To determine risk factors for non-O157 STEC infection, we enrolled 939 patients and 2,464 healthy controls in a case–control study conducted in 10 US sites. The highest population-attributable fractions for domestically acquired infections were for eating lettuce (39%), tomatoes (21%), or at a fast-food restaurant (23%). Exposures with 10%–19% population attributable fractions included eating at a table service restaurant, eating watermelon, eating chicken, pork, beef, or iceberg lettuce prepared in a restaurant, eating exotic fruit, taking acid-reducing medication, and living or working on or visiting a farm. Significant exposures with high individual-level risk (odds ratio >10) among those >1 year of age who did not travel internationally were all from farm animal environments. To markedly decrease the number of STEC-related illnesses, prevention measures should focus on decreasing contamination of produce and improving the safety of foods prepared in restaurants.

During a routine quality control, the “SPAR Natur*pur organic pistachios without shell, roasted and salted 150g” with the best before dates (MHD) 28.05.2023, 28.06.2023 and 28.02.2024 found that aflatoxin exceeded the maximum legal value. For this reason, SPAR is recalling all products with the above best before dates. The affected goods with BBD 05/28/2023, 06/28/2023 and 02/28/2024 have already been withdrawn from circulation.

Customers are requested not to consume “SPAR Natur*pur organic pistachios without shell, roasted and salted 150g” with the best before dates (MHD) May 28th, 2023, June 28th, 2023 and February 28th, 2024. All other products from SPAR Natur*pur or pistachios from other brands are not affected by this recall.

All customers who have bought said product can, of course, return it to the nearest SPAR, EUROSPAR or INTERSPAR store or Maximarkt. Customers are reimbursed the purchase price even without a receipt.
