Recent multistate outbreaks of salmonellosis linked to fresh cucumbers underscore the importance of understanding Salmonella behavior on cucumbers under different storage conditions. No validated models which describe the impact of environmental factors on growth of Salmonella on sliced cucumbers currently exist. This study developed mathematical models to predict the growth of Salmonella on sliced cucumbers at different temperature and relative humidity (RH) conditions. Sliced cucumbers were inoculated with four-strain cocktail of Salmonella and placed in desiccators containing saturated salt solution to create controlled RH environments (~15, 50, 100% RH) at 7, 14, and 21°C for up to 120 h. Predictive models were developed using Baranyi and Roberts equation as a primary model and estimated kinetic parameters were fitted into a square root (or Ratkowsky) equation for secondary models. The maximum growth rates for Salmonella on sliced cucumbers depended on temperature but not RH. The square root model for Salmonella growth was SQRT(μ) = 0.0297 * (T – 6.5185), with a high R 2 value (0.98). The models in this study will be useful for future microbial risk assessments and predictions of Salmonella behavior in the cucumbers to manage the risk of Salmonella on sliced cucumbers.
General Mills of Golden Valley, MN is recalling certain “dipz” Lunch Blox products because of potential Salmonella contamination.
The products were distributed in California, Georgia, Louisiana, Michigan, Missouri, New Hampshire, New Jersey, New York, Oregon, Pennsylvania and Texas.
A new E. coli O157:H7 outbreak has been added to the FDA’s CORE Outbreak Investigation Table. At least 10 people are sick. We do not know the states where the ill persons live, their age range, illness onset dates, or if anyone has been hospitalized. Traceback has been initiated, but no recall has been issued, there has been no on-site inspection or sample collection, and no analysis of any product has started. This new E. coli O157:H7 outbreak is probably associated with an FDA-regulated food.

Prairie City Bakery of Vernon Hills, IL is voluntarily recalling select lots of Prairie City Bakery® Peanut Butter Chocolate Chip Ooey Gooey Butter Cake. The product contains Jif® peanut butter that was voluntarily recalled by the J.M. Smucker company on May 20, 2022, due to the potential for Salmonella contamination.
Salmonella is an organism which can cause serious and sometimes fatal infections in young children, frail or elderly people, and others with weakened immune systems. Healthy persons infected with Salmonella often experience fever, diarrhea (which may be bloody), nausea, vomiting and abdominal pain. In rare circumstances, infection with Salmonella can result in the organism getting into the bloodstream and producing more severe illnesses such as arterial infections (i.e., infected aneurysms), endocarditis and arthritis.
At the time of this release, there have been no illnesses reported.
This recall affects 50,220 individually wrapped cakes sold in 2 ounce packages and in ten packs of 2 ounce packages of Prairie City Bakery® Peanut Butter Chocolate Chip Ooey Gooey Butter Cake containing cooked peanut butter. They were sold at gas stations and convenience stores nationwide.

In a follow-up on the gastrointestinal outbreak that affected 93 people (passengers and crew) onboard a recent voyage of Carnival Cruise Line’s, Carnival Splendor, the Centers for Disease Control and Prevention (CDC) now states that norovirus was the causative agent of the outbreak.
Seventy-seven passengers and 16 crew members suffered with symptoms of vomiting and diarrhea during the May 24–31, 2022 voyage.
Northern Tier Bakery, LLC, a St. Paul Park, Minn. establishment, is recalling approximately 905 pounds of ready-to-eat (RTE) salad products that may be adulterated with Listeria monocytogenes, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced today.
The RTE salad items were produced from May 18, 2022, through June 8, 2022. The following products are subject to recall [view labels]:
4-oz. plastic packages of “SUPERMOM’S KITCHEN Chef Salad EGG, WHITE TURKEY MEAT, HAM, MONTEREY JACK & CHEDDAR CHEESE WITH CRISP ROMAINE & GREEN LEAF LETTUCE” with “ENJOY THROUGH” dates of 6/9 and 6/11 represented on the label.
4.3-oz. plastic packages of “SUPERMOM’S KITCHEN Caesar Salad SEASONED CHICKEN BREAST STRIPS, PARMESAN CHEESE & CROUTON PACKET WITH CRISP ROMAINE & GREEN LEAF LETTUCE” with “ENJOY THROUGH” dates of 5/26, 5/28, 5/31, 6/2, 6/4, 6/8, 6/9, 6/11, 6/14 and 6/16 represented on the label.
The products subject to recall bear establishment number “EST. 19860” inside the USDA mark of inspection. These items were shipped to retail locations in Minnesota and Wisconsin.
The problem was discovered when the company notified FSIS that the firm’s product sampling resulted in a positive for Listeria monocytogenes.
There have been no confirmed reports of adverse reactions due to consumption of these products. Anyone concerned about an injury or illness should contact a healthcare provider.
Consumption of food contaminated with L. monocytogenes can cause listeriosis, a serious infection that primarily affects older adults, persons with weakened immune systems, and pregnant women and their newborns. Less commonly, persons outside these risk groups are affected.
FSIS is concerned that some product may be in consumers’ refrigerators. Consumers who have purchased these products are urged not to consume them. These products should be thrown away or returned to the place of purchase.
