Research – Peanut Butter Food Safety Concerns—Prevalence, Mitigation and Control of Salmonella spp., and Aflatoxins in Peanut Butter

Peanut butter has a very large and continuously increasing global market. The food safety risks associated with its consumption are also likely to have impacts on a correspondingly large global population. In terms of prevalence and potential magnitude of impact, contamination by Salmonella spp., and aflatoxins, are the major food safety risks associated with peanut butter consumption. The inherent nature of the Salmonella spp., coupled with the unique chemical composition and structure of peanut butter, present serious technical challenges when inactivating Salmonella spp. in contaminated peanut butter. Thermal treatment, microwave, radiofrequency, irradiation, and high-pressure processing all are of limited efficacy in inactivating Salmonella spp. in contaminated peanut butter. The removal of aflatoxins in contaminated peanut butter is equally problematic and for all practical purposes almost impossible at the moment. Adopting good manufacturing hygiene practices from farm to table and avoiding the processing of contaminated peanuts are probably some of the few practically viable strategies for minimising these peanut butter food safety risks. The purpose of this review is to highlight the nature of food safety risks associated with peanut butter and to discuss the effectiveness of the initiatives that are aimed at minimising these risks.

Problem: too high aflatoxin B1 content.


The FASFC is today recalling consumers of the product “Gegrillte Erdnuss ohne Haut” (Roasted peanuts without skin) of the Double Panda brand.

This recall follows a notification via the RASFF system (European Food and Feed Rapid Alert System), concerning an excessively high level of aflatoxin B1.

It has therefore been decided to withdraw this product from sale and to recall it from consumers.

Kenya – Aflatoxins link in Kenya cancer burden

Known as a family of toxins produced by certain fungi, aflatoxins have been established to be highly harmful to human beings.

Of late they have also been linked to the high cases of cancer. The best-known one is Aspergillus flavus, that attacks crops such as maize, pulses and groundnuts while in the field and in storage when they are not dried and stored properly.

Aflatoxins also lower the body’s immunity and cause permanent and irreversible stunting in children. And in cases of acute poisoning, they can lead to instant death. But in cases of long-time exposure, they are known to provoke liver cancer.

A study conducted in February this year by James Kibugu, of the Kenya Agricultural and Livestock Research Organisation (Kalro) and four others shows that these poisonous chemicals are becoming a major burden on Kenya’s health care system.

But Kenya could reduce the cancer burden if food safety standards are strictly enforced.

Kibugu’s paper published in the African Journal of Food, Agriculture, Nutrition and Development notes that common cereals like maize and wheat have total aflatoxin levels higher than Kenyan, USA, and EU standards.
