Research – Student develops a sensor that can detect when food has spoiled

A graduate student at Southern Methodist University (SMU), has developed a miniature pH sensor that can detect when food has spoiled in real-time.

The 2-millimeter long and 10-millimeter wide flexible pH sensor is designed to be incorporated into food packaging, such as plastic wrapping. Traditional pH meters are too bulky to be included in every package of food to monitor freshness in real-time.

“The pH sensors we developed work like a small wireless radio-frequency identification device – similar to what you find inside your luggage tag after it has been checked at airports or inside your SMU IDs. Every time a food package with our device passes a checkpoint, such as shipping logistics centers, harbors, gates, or supermarkets’ entrances, they could get scanned and the data could be sent back to a server tracking their pH levels,” Khengdauliu Chawang, graduate student and lead creator of the device, said.

USA – House of Raeford Recalls Foster Farms Brand Mini Chicken Corn Dog Products Due to Possible Spoilage

WASHINGTON, June 30, 2023 – House of Raeford, a Nesmith, S.C., establishment, is recalling approximately 76,961 pounds of corn dog products due to possible spoilage, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced today.

The mini chicken corn dogs were produced on April 24, 2023. The following product is subject to recall [view labels]:

  • 1.83-lb. resealable bag containing “FOSTER FARMS MINI CORN DOGS BITE-SIZED CHICKEN FRANKS DIPPED IN BATTER HONEY CRUNCHY FLAVOR” with lot codes 123114 and 223114 and best if used by date of 4/23/24.

The product subject to recall bears the establishment number “P- 9136” printed on the package. These items were shipped to retail locations nationwide.

The problem was discovered after the firm notified FSIS that it received consumer complaints that the product had an odor, off appearance, and unpleasant taste.

There have been no confirmed reports of adverse reactions due to consumption of these products. Anyone concerned about an injury or illness should contact a healthcare provider.

Research- When Does Milk Spoil? The Use of Rejection Threshold Methodology to Investigate the Influence of Total Microbial Numbers on the Acceptability of Fresh Chilled Pasteurised Milk

Abstract

The consumer rejection threshold (RjT) method was applied to determine the total microbial numbers (TMNs) where consumers find that the quality of whole fresh chilled pasteurised milk (WFCPM) and skim milk (Trim) stored at 4.5 ± 0.5 °C is no longer acceptable. Food spoilage progression was supported by measurements of VOCs and the terms consumers used to describe the ageing fresh chilled pasteurised milk (FCPM). RjTs for TMN of 7.43 and 7.34 log10 CFU.mL−1 for WFCPM and Trim, respectively were derived using Hill’s equation from a series of paired preference tests comparing fresh and aged milks (3–26 days) assessed by consumers (WFCPM, n = 55; Trim, n = 52). A poor relationship between storage time and TMN was found, owing mainly to batch-to-batch and within-batch variation in the milk’s post-pasteurization contamination (PPC) levels. At the RjT, there was a significant change in the signal intensities for a number of spoilage-related VOCs that occurred in the FCPM headspace (p ≤ 0.05), which were measured using proton transfer reaction–mass spectrometry (PTR-MS), including m/z 33, 45, 47, 61, 63, 69, 71, 87, and 89, tentatively identified as methanol; acetaldehyde; ethanol; acetate (acetic acid and acetate esters); dimethyl sulphide (DMS); isoprene, furan, and aldehydes; 2-butanone; and pentanal and butyrates (butyric acid and butyrate esters), respectively. Consumers described the milks at TMN greater than the RjTs using terms like off, expired, sour, spoilt or rancid. This multidisciplinary study has provided data on the importance of PPC and subsequent increases in TMN on VOCs associated with FCPM and consumer’s preferences and highlighted the value of measuring a range of variables when investigating consumer’s perception of food quality and shelf-life.
