Buffet and Food Safety

In Hong Kong, we are very privileged to savour different cuisines. If we wish to enjoy a wide variety of foods, buffet is the best choice. As buffets are on offer in many restaurants, how should we choose? That is simple and we just have to apply the 5 Keys to Food Safety.

First, choose. We should patronise reliable and licensed restaurants with good hygiene. Check whether the hygiene conditions of the restaurant are good and their staff observe good personal hygiene. When choosing foods, pick those fresh ones.

Second, clean. We should wash hands thoroughly with warm water and liquid soap before eating and after going to the toilets. Check whether the tableware is clean and in good condition and ask for a change if there is dirt or crack on it.

Third, separate. We should avoid cross-contamination between raw and cooked foods. In some restaurants, consumers can choose raw materials they like and ask chefs to prepare dishes for them. When taking these raw foods, use designated utensils as provided. Besides, observe whether chefs properly apply the key “separate” in the preparation of foods.

Fourth, cook. Make sure that foods are cooked thoroughly, especially those cooked at the spot such as BBQ and hotpot foods. If in doubt, ask the chefs to cook the foods again until it is properly done. Juices from thoroughly cooked meats and poultry should be clear and no longer red.

Lastly, safe temperature. Hot dishes should be placed at temperature above 60oC, while cold dishes and foods to be eaten raw such as raw oysters, sashimi, sushi and salads should be put in a chiller or on ice with storage temperature at 4oC or below to prevent bacteria growth. Since cold dishes and foods to be eaten raw are high-risk foods, you should pay special attention to their storage conditions. If cold dishes are not cold, hot dishes are only lukewarm or foods look or taste abnormal, you should not eat them. Eat the foods as soon as possible after taking them and do not leave foods under room temperature for a long time.

Always bear in mind the above 5 Keys to Food Safety and never overeat at buffets. Pregnant women, children, the elderly and people with weakened immunity should avoid high-risk foods like foods to be eaten raw and cold dishes as far as possible.

Hong Kong people like delicious food and sashimi is probably one of the most popular foods in recent years. Due to a high market demand, sashimi is available not only in Japanese restaurants, but also in restaurants providing South-East Asian foods. Sashimi is eaten raw and improper preparation and excessive intake can lead to food poisoning. As sashimi is a high risk food, the Food and Environmental Hygiene Department (FEHD) has stringent licensing requirements for food premises preparing and selling sashimi in Hong Kong.

Marine shrimps are commonly used in shrimp sashimi. Their shells are easily contaminated by pathogens, like Vibrio parahaemolyticus and Vibrio cholera. Hong Kong – CFS finds Salmonella in sample of salty chicken

The Centre for Food Safety (CFS) of the Food and Environmental Hygiene Department announced today (January 15) that a sample of salty chicken was found to contain a pathogen, Salmonella. The CFS is following up on the case.

“The CFS collected the above-mentioned sample from a booth at an exhibition in Wan Chai for testing under its routine Food Surveillance Programme, the booth number was Booth 3B15 of Friendship Rainbow Company Limited at the Hong Kong Food Festival. The test result showed the presence of Salmonella in 25 grams of the sample, exceeding the criterion of the Microbiological Guidelines for Food which states that Salmonella should not be detected in 25g of a ready-to-eat food sample,” a spokesman for the CFS said.

The CFS has informed the vendor concerned of the above irregularity and instructed it to recall the relevant food product. Members of the public may call its hotline at 5708 1363 during office hours for enquiries about the recall. The CFS is also tracing the source and distribution of the product concerned. Prosecution will be instituted should there be sufficient evidence.

For the sake of prudence, the CFS appealed to members of the public who had purchased salty chicken from the above-mentioned booth at the exhibition held from December 23 to 27, 2023 not to consume them. If symptoms develop after consuming the food, they should seek medical advice as soon as possible.

According to section 54 of the Public Health and Municipal Services Ordinance (Cap. 132), all food available for sale in Hong Kong, locally produced or imported, should be fit for human consumption. An offender is subject to a maximum fine of $50,000 and imprisonment for six months upon conviction.

“Salmonella infection may cause fever and gastrointestinal upset such as vomiting, abdominal pain and diarrhoea. The effects on infants, young children, the elderly and people with a weak immune system could be more severe and may even lead to death,” the spokesman said.

The CFS will continue to follow up on the incident and take appropriate action to safeguard food safety and public health. Investigation is ongoing.

Hong Kong – Trade instructed to suspend importing and selling raw oysters harvested in area 50-07 Saint Vaast La Hougue in France

The Centre for Food Safety (CFS) of the Food and Environmental Hygiene Department today (January 8) instructed the trade to suspend the import of raw oysters harvested in area 50-07 Saint Vaast La Hougue in France. The trade should also stop using or selling the product concerned immediately should they possess it.

A spokesman for the CFS said, “The CFS received notifications from the Rapid Alert System for Food and Feed of the European Commission that ready-to-eat raw oysters harvested in area 50-07 Saint Vaast La Hougue in France were detected with norovirus and the area concerned was closed. A preliminary investigation by the CFS found that a local importer, Alliance Gourmet Limited, had imported the affected raw oysters. For the sake of prudence, the CFS has immediately suspended the import into and sale within Hong Kong of raw oysters harvested in the area concerned, and instructed the importer to stop sales and remove from shelves the affected oysters.”

The spokesman said that preliminary investigation by the CFS found that five kilograms of the affected oysters had been imported by the importer concerned. All were distributed to a restaurant and were consumed. The trade should also stop selling other products from the affected area if they possess them.

The spokesman pointed out that as oysters feed by filtering a large volume of seawater, pathogens can accumulate in them if they are grown in or harvested from contaminated water. Raw or partially cooked oysters are high-risk foods. Susceptible groups, such as pregnant women, young children, the elderly and people with weakened immune systems or liver diseases, should avoid eating raw oysters.

The CFS will inform the French authorities and will also notify the local trade. It will continue to follow up on the incident and take appropriate action to safeguard food safety and public health. An investigation is ongoing.

Reason For Issuing Alert The CFS received a notification from the RASFF of the European Commission that the above-mentioned batches of product might have been contaminated with Listeria monocytogenes and are being recalled.

Listeria monocytogenes can be easily destroyed by cooking but can survive and multiply at refrigerator temperature. Most healthy individuals do not develop symptoms or only have mild symptoms like fever, muscle pain, headache, nausea, vomiting or diarrhoea when infected. However, severe complications such as septicaemia, meningitis or even death may occur in newborns, the elderly and those with a weaker immune system. Although infected pregnant women may just experience mild symptoms generally, the infection of Listeria monocytogenes may cause miscarriage, infant death, preterm birth, or severe infection in newborns.

In order to reduce the risk of listeriosis, susceptible populations such as pregnant women should consume freshly prepared hot food where possible, reheat chilled food until it is hot all the way through, and avoid high-risk foods, including ready-to-eat food such as cold cuts, cold smoked seafood, soft cheeses, salads, etc, or cook them thoroughly before consumption, even if they are presented as part of a dish.

Action Taken by the Centre for Food Safety Upon learning of the incident, the CFS immediately contacted the concerned local importer for follow-up. A preliminary investigation found that the above-mentioned importer had imported into Hong Kong the affected batches of the product concerned. The importer concerned has stopped sales, has removed the affected product from shelves and has initiated a recall according to the CFS’s instructions.

Advice to Consumers Not to consume the affected products if they have bought any.

The Centre for Food Safety (CFS) of the Food and Environmental Hygiene Department today (July 13) urged the public not to consume a batch of prepackaged chilled crayfish due to possible contamination with Listeria monocytogenes, a pathogen. The trade should stop using or selling the affected batch of the product immediately if they possess it.

The spokesman said that the CFS has informed the vendor concerned of the irregularity and has instructed it to stop sale and to remove from shelves the affected batch of the product.
