Research – IFR – Contact Killing of Salmonella Typhimurium by Human Faecal Bacteria

Dr Carmen Pin, and PhD student Gaspar Avendaño-Perez at the Institute of Food Research, which is strategically funded by the Biotechnology and Biological Sciences Research Council, have recently found a novel mode of interaction between Salmonella, a foodborne pathogen, and the gut bacteria that leads to the inactivation of Salmonella. This interaction relies on Salmonella and the gut bacteria being in close proximity, or through cell to cell contact. This new way of interaction between the “good” and the” bad” bacteria may contribute to prevent intestinal colonization and infection by foodborne pathogens.

Australia – Listeria Hospital Food Outbreak

A batch of dodgy profiteroles are being blamed on a listeria outbreak that could have spread across 13 public hospitals in Sydney.

The NSW Department of Health says that so far three patients, including a terminally ill man at Campbelltown Hospital who has since died, have tested positive for listeriosis.

The two other patients, one from Concord hospital and another from the Royal Prince Alfred are responding well to treatment.

The profiteroles which were made by Rich Products Australia have since been withdrawn from all patient meals.

An investigation into the outbreak which is believed to have occurred between mid-March and April 16 is ongoing.

Infection rates of the foodborne pathogens Campylobacter and Vibrio parahaemolyticus rose in 2012, while other major pathogens generally maintained rates similar to recent years, according to the nation’s annual “food safety progress report” published by the U.S. Centers for Disease Control and Prevention Thursday.

Germany – Ciguatoxin Poisoning Outbreak Confirmed

First outbreak of ciguatoxin poisoning after eating fish in Germany now confirmed by analytical methods

As a rule, the first symptoms experienced are nausea, vomiting and diarrhoea. Most people suffering from ciguatoxin poisoning later also suffer from extremely unpleasant sensations such as burning, tingling, and pain on contact with cold. These symptoms can continue for weeks or even months. If such symptoms occur after eating fish, it is very likely that the person concerned is suffering from Ciguatera, i.e. ciguatoxin poisoning. The official control laboratories, the Poison Information Centre of North Germany and other public health and veterinary authorities reported 14 cases of such poisoning following consumption of red snapper fillets to the National Reference Laboratory for Marine Biotoxins and the Centre for Documentation and Assessment of Poisonings at the Federal Institute for Risk Assessment (BfR) at the end of 2012. The trigger are metabolites produced from algae belonging to the group of so-called species of dinoflagellates which are found on coral reefs of subtropical and tropical marine areas of the Caribbean, the Indian ocean and the Pacific. These algae serve as food for plant-eating fish. If these small fish are eaten in turn by predatory fish, the toxins can accumulate and thus get into the human food chain. “Ciguatoxin poisoning is one of the most common types of fish poisoning worldwide”, says Professor Dr. Dr. Andreas Hensel, President of the BfR. “However, this type of poisoning was confined to certain regions of the world until recently. As a result of the worldwide trade with tropical and subtropical fish, an increase in incidence of such poisoning is to be expected.” The Federal Institute for Risk Assessment has sent leftovers of fish dishes eaten by affected persons as well as samples of the fish batches to the European Reference Laboratory for Marine Biotoxins in Vigo (Spain). Using the analysis method established there in 2012 it was confirmed that the fish samples contained ciguatoxins.

According to estimates, between 50 and 500 thousand cases of ciguatoxin poisoning occur every year. In Germany, such fish poisoning used to be known as very rare travel diseases occurring among tourists who had spent their holiday in tropical or subtropical countries where they had eaten fish dishes. The current outbreak is the first one which was caused by the consumption of fish purchased in Germany. According to a study, the outbreak was caused by red snapper fillets which a German importer had obtained from an Indian distributor. The affected shipment was recalled immediately after poisoning became known.

Ciguatoxins require exceptionally sensitive analysis methods, since ciguatoxins cause symptoms in extremely low concentrations. Different chemical structures of Ciguatoxins are known which, in addition, can vary in dependence of the territorial fishing areas. Until 2012, there was no analysis method allowing fish to be tested for ciguatoxins in the relevant concentration range.

The European Reference Laboratory for Marine Biotoxins (EURL) in Vigo (Spain) established an analysis method for the detection of ciguatoxins in 2012 and found ciguatoxins in most of the fish samples collected in Germany in connection with the outbreak. However, this method is not as yet available for routine testing.

There is no way for consumers to tell whether fish contains ciguatoxins or not. Contamination with ciguatoxins cannot be reduced by frying or cooking. This means that the risk can only be minimised if fish is sold in the market which comes from fishing areas in subtropical and / or tropical waters that are far away from coral reefs or if consumers refrain from eating predatory fish from these waters altogether. In addition, the origin of the fish products must be comprehensively documented and completely traceable.

Following poisoning with ciguatoxins, early symptoms such as nausea, abdominal pains, stomach-ache, vomiting and diarrhoea occur which are also characteristic of other types of food poisoning. These symptoms are soon accompanied or replaced by the typical impaired neurological sensation on the skin such as a feeling of numbness in the hands and feet, muscle pain, physical weakness and notably abnormal heat and cold sensations. The latter symptoms can, in some cases, persist for weeks or months. There is currently no specific therapy.

USA – Fruit Juice Recall Patulin – Mould

Wegmans is recalling two types of its store brand fruit juices because they contain an unacceptable level of patulin, which is a by-product of mold. Patulin is a mycotoxin produced by molds such as Penicillium, Aspergillus, and Byssochylamys. An ingredient used to make the juices is the problem. Patulin is not Penicillin and it is not a mold. It’s not likely that exposure to patin at the low levels found in the juice would cause any symptoms, but you should not consume it because in laboratory animals it can cause DNA damage and damage the immune and nervous systems.

Research- Contamination on Sprouts – Food Packaging

A study published int he April issue of the Journal of Food Science looked at seed disinfection treatments of sprouts. In the last few years, there have been several major foodborne illness outbreaks linked to raw sprouts, including an E. coli outbreak linked to clover sprouts served at Jimmy John’s restaurants that sickened 29 people in 11 states. And there were seven recalls of sprouts for pathogenic bacterial contamination.

Sprouts are problematic for several reasons. First, the bacteria can be encapsulated inside the seed, making it impervious to physical disinfection such as the application of calcium hypochlorite. And the seeds are sprouted in warm, moist conditions, which are ideal for bacterial growth.

The FDA released guidelines in 1999 designed to limit this problem, including growing seeds using good agricultural practices, conditioning and storing seed under sanitary conditions, following GMPs at sprouting facilities, applying a disinfection treatment just before sprouting, and in-process testing of spent sprout irrigation water for pathogens before the product enters commerce. While sproutbreaks declined after these guidelines were released, the treatments are variable and food poisoning cases continue.

The study examined chemical disinfection with 20000 ppm calcium hypochlorite, and found that it does reduce microbial load on seeds. But there is a high variability in efficacy. Increasing treatment time did not improve the microbial load, but reduced germination rate of seeds. Other chemicals have not been adequately tested.

Researchers at Rensselaer Polytechnic Institute (RPI) have found a way to kill Listeria and other pathogens without chemicals or antibiotics. Building on a method they developed to coat medical equipment with an agent that can kill antibiotic-resistant Staphylococcus aureus (MRSA), the researchers added lytic enzymes to nanoparticles of food-safe silica and to starch nanoparticles commonly used in food packaging.

“In this study, we have identified a new strategy for selectively killing specific types of bacteria. Stable enzyme-based coatings or sprays could be used in food supply infrastructure—from picking equipment to packaging to preparation—to kill Listeria before anyone has a chance to get sick from it,” said Ravi Kane, RPI’s  P.K. Lashmet Professor of Chemical and Biological Engineering, in a statement. “What’s most exciting is that we can adapt this technology for all different kinds of harmful or deadly bacteria.”

Malta – Salmonella Outbreak Petting Farm

MALTA – Salmonella has been detected in peacocks and turkeys section in the popular “Petting Farm” in Ta’ Qali. The salmonella was picked up through regular tests on the animals.

“Petting Farm” is situated on the southern part of the Ta’ Qali National Park. It covers a footprint of circa 11,600m2. It is newly opened recreation facilities which offer a great interaction experience with farm animals for children in a beautifully landscaped and relaxing environment.

The area has been quarantined and cordoned off immediately as soon as the animals tested positive for salmonella enteritidis.

This particular strain of the salmonella bacterium affects and infects poultry – especially chicken flocks, without causing visible disease, spreading rapidly. When passed on to humans, usually through consumption of uncooked meat or eggs and contaminated food, it causes symptoms such as abdominal cramps, diarrhoea, nausea, vomiting and fever.

Canada – Recall – Clostridium botulinum – Smoked Fish

The Canadian Food Inspection Agency (CFIA) is warning the public not to consume the smoked fish products described in the link above because they may be contaminated with Clostridium botulinum.  Toxins produced by these bacteria may cause botulism, a life-threatening illness.

There have been no reported illnesses associated with the consumption of these products.

Central America – 4 Dead E.coli Outbreak

At least 96 people have been hospitalized and 4 have died in an E. coli outbreak in Guatemala linked to fresh produce.

The outbreak, which has affected residents of the town of Santo Domingo Xenacoj in South Central Guatemala, is thought to have originated with contaminated fruits and vegetables, reported the Associated Press Thursday.

A male resident of the town reported that two of his children, ages 9 and 12, had died in the outbreak, according to AP.

Specimen taken from the four victims who died linked their deaths to E. coli, said health officials.

Canada – Extended Recalls – Eggplants Clostridium botulinum and Nut Mix Salmonella

The Canadian Food Inspection Agency (CFIA) and Osmat Imports are warning the public not to consume the Osmat Imports brand Stuffed Eggplants product described below because it may be contaminated with Clostridium botulinum. Toxins produced by these bacteria may cause botulism, a life-threatening illness. The affected product, Osmat Imports brand Stuffed Eggplants, was sold in 2 kg jars (4.4 lbs) bearing UPC 8 37770 00009 7 and Best Before: Lot 6 EXP JA 14. There have been no reported illnesses associated with the consumption of this product. The importer, Osmat Imports, North Vancouver, BC is voluntarily recalling the affected product from the marketplace. The CFIA is monitoring the effectiveness of the recall.

The public warning issued on April 4, 2013 has been updated to include an additional product because this product may be contaminated with Salmonella. Previously identified products included in this recall can be found on the Canadian Food Inspection Agency (CFIA) website. The Canadian Food Inspection Agency (CFIA) and Trophy Foods Inc. are warning the public not to consume Trophy brand Nut Mix In Shell because they may be contaminated with Salmonella. This product has been distributed in British Columbia, Alberta, Saskatchewan, Manitoba, and may have been distributed to other provinces. There have been no reported illnesses associated with the consumption of this product. The manufacturer, Trophy Foods Inc., Calgary, Alberta is voluntarily recalling the affected product from the marketplace. The CFIA is monitoring the effectiveness of the recall.
