Research – How to Improve Surveillance Program for Shiga Toxin-Producing E. coli (STEC): Raw Milk – Gap Analysis and Pilot Study
Several pathotypes of enteric E. coli have been identified. The group represented by Shiga toxin-producing E. coli (STEC) is of particular interest. Raw milk and raw milk products are significant sources of STEC infection in humans; therefore, identifying pathogens at the herd level is crucial for public health. Most national surveillance programs focus solely on raw milk and raw milk cheeses that are ready for retail sale, neglecting the possibility of evaluating the source of contamination directly at the beginning of the dairy chain. To assess the viability of the application of new molecular methodologies to STEC identification in raw milk filters and in calf feces, we analyzed 290 samples from 18 different dairy herds, including 88 bulk tank milk (BTM), 104 raw milk filters (RMF), and 98 calf feces samples. In total 3.4% of BTM, 41.4% of RMF, and 73.4% of calves’ feces were positive for stx, supporting our hypothesis that BTM is not a suitable matrix to assess the presence of STEC at herd level, underestimating it. Our conclusion is that the surveillance program needs critical and extensive improvements such as RMF and calves’ feces analysis implementation to be more efficient in detecting and preventing STEC infections. The epidemiology of these infections and the characteristics of the pathogen clearly show how a One Health approach will be pivotal in improving our capabilities to control the spread of these infections.

Research – Preliminary Investigation towards the Use of Infrared Technology for Raw Milk Treatment
Abstract
Infrared (IR) technology offers a promising solution for reducing microbiological loads in various food types while preserving their quality traits, such as flavour. However, research on IR’s application in complex matrices is limited. Therefore, our preliminary study aimed to evaluate its effectiveness in sanitizing bovine raw milk. We assessed the bacterial count before and after IR treatment by comparing volatile organic compound profiles via headspace extraction and GC/MS analysis. Our findings showed that higher energy levels led to a greater bacterial reduction. IR85 was the most effective in reducing Coliforms and Enterobacteriaceae in non-homogenised samples, with a reduction ranging from −1.01 to >−2.99 and from −1.66 to −3.09 Log CFU/mL, respectively. IR60 and 70 showed no efficacy, while IR80 had intermediate but still satisfactory effect. IR85 notably affected volatile compounds, particularly increasing hexanal (from 0.08 to 4.21 ng g−1) and dimethyl sulphone (from 10.76 to 26.40 ng g−1), while IR80 better preserved the aroma profile. As a result, only IR80 was tested with homogenised raw milk, demonstrating significant bacterial reduction (from >2.39 to 3.06 Log CFU/mL for Coliforms and from 1.90 to >2.45 Log CFU/mL for Enterobacteriaceae) and maintaining the aroma profile quality.

USA – Outbreaks of illness tied to raw milk raise concerns
March 5 (UPI) — Recent outbreaks of illness in the United States are raising renewed concerns about selling and consuming raw milk and raw milk products.
While advocates have touted the nutritional value of unpasteurized milk, agencies like the U.S. Food and Drug Administration have continued to warn the public of associated risks with consuming it in any form.
USA – PA Ag Department Searches Amos Miller Farm After illnesses – STEC E.coli
The Pennsylvania Department of Agriculture has searched the Amos Miller farm in Upper Leacock Township after illnesses were reported when people allegedly consumed raw dairy products from that facility, according to news reports. The search took place on Thursday, January 4, 2023.
The Agriculture Department told Lancaster Online that it was notified by health officials in New York and Michigan about illnesses in underage people who allegedly drank raw eggnog and ate other raw dairy products from the Miller Organic Farm. Tests were positive for Shiga toxin-producing E. coli (STEC) bacteria, according to those officials. The search warrant was for illegal raw milk and raw milk products, including eggnog.

USA – FDA sends Cooperstown Cheese Company warning after inspection finds Listeria in facility
A food firm in New York is on notice from the FDA for serious violations of the Current Good Manufacturing Practice, Hazard Analysis, and Risk-Based Preventive Controls for Human Food regulation. These violations include the presence of Listeria monocytogenes, mold and more.
Last July, Cooperstown Cheese Company recalled 1,400 pounds of cheese because of positive tests for Listeria monocytogenes contamination.
In a Nov. 24, 2023, warning letter, the FDA described a June 21 through July 28, 2023 inspection of their ready-to-eat (RTE) raw milk cheese manufacturing facility in Milford, NY.
