Research -E. coli’s adaptation to extreme temperatures helps explain resistance to certain drugs

Long before bacteria had to contend with antibiotic drugs, they had to survive extreme temperatures as Earth warmed and cooled over millennia. Could the adaptations they evolved to temperature — especially heat — help explain why certain strains are resistant to certain drugs? A new study by a research team at the University of California-Los Angeles that includes Santa Fe Institute External Professor Pamela Yeh suggests that defenses against extreme temperatures, do, indeed, give E. coli bacteria an advantage in fending off certain drugs.

Research – Novel Continuous and Manual Sampling Methods for Beef Trim Microbiological Testing

A sampling method that represents a greater proportion of the beef trimmings in a 900-kg combo bin should improve the current pathogen sampling and detection programs used by fresh beef processors. This study compared two novel, nondestructive sampling methodologies (a continuous sampling device [CSD] and a manual sampling device [MSD]) with the current industry methodologies, the N60 Excision (the “gold standard”) and N60 Plus, for collection of trim samples. Depending on the experiment, samples were analyzed for naturally occurring Escherichia coli O157:H7 or Salmonella, inoculated surrogates, or indicator organisms in multiple plants, on multiple days, across multiple lean percentage mixtures. Experiments 1A and 1B with natural contamination found no E. coli O157:H7 but similar (P > 0.05) prevalence of Salmonella (CSD 9.2% versus N60 Excision 6.0%) and similar (P > 0.05) levels of indicator organisms for CSD compared with both N60 methodologies. In experiments 2 and 3, CSD cloth sampling had the same or higher prevalence of naturally occurring E. coli O157:H7 and E. coli O157:H7 surrogate organisms, as well as similar levels of indicator organisms compared with the N60 methodologies. In experiment 4, MSD cloth sampling detected similar (P > 0.05) prevalence of E. coli O157:H7 surrogate organisms, as well as slightly lower (P < 0.05) levels of indicator organisms compared with N60 Plus. In experiment 5, the MSD found similar (P > 0.05) prevalence of naturally occurring E. coli O157:H7 and the same or slightly higher (P < 0.05) levels of naturally occurring indicator organisms compared with N60 Plus. In experiment 6, the MSD detected the same (P > 0.05) prevalence of naturally occurring Salmonella as did N60 Excision. The results of these experiments collectively demonstrate that sampling beef trim using either the CSD or MSD provides organism recovery that is similar to or better than the N60 Excision or the N60 Plus methodologies.

Research – Dog owners face higher risk of E. coli, salmonella; bugs thrive in pets’ water bowls

It turns out that dogs, apart from giving owners love and companionship can also give them a host of diseases.

Scientists have discovered their water bowls can harbour life-threatening bacteria, including E. coli, salmonella and MRSA.

Scientists say they have clear evidence to show dog water bowls can pose rosk of infection to both humans and their pets.

The research, conducted at the Hartpury University, tested three types of bowls as they wanted to know how much the build-up of bacteria could be affected by the material a bowl is made from, and how often it is cleaned.

Results revealed dangerous bacteria was most likely to thrive in plastic bowls, with the cheap containers harbouring the highest quantities of bugs.

However, the most harmful bacteria species, including strains of E. coli and MRSA, were most frequently found in ceramic bowls. Stainless steel bowls were also tested.

The study, presented at the 69th annual meeting of the European Federation of Animal Science at Dubrovnik in Croatia last month, also found the longer dog bowls are used, the greater quantity and species of bacteria that are present.

Animal scientists, led by Coralie Wright, have now called for stricter cleaning regimes of water bowls, to minimise the risk of spreading any killer bugs.

USA – Arizona growers hope new leafy greens protocols will help prevent outbreaks

For months romaine growers, consumer advocates, researchers and government agencies have been scrutinizing factors that contributed to this year’s deadly E. coli outbreak. As of this week — about 10 days into planting for their next harvest — most growers in the implicated region are operating under new food safety requirements.

The new “metrics” for members of the Arizona Leafy Greens Marketing Agreement are effective immediately. Officials with the grower consortium said inspections are set to begin in November. Arizona growers plant romaine at this time of year, with their harvest season usually running from November through mid-March. 

The revised requirements in Arizona involve:

  • Daily cleaning of equipment; 
  • More extensive review of crop impact after weather events such as flooding or high winds; 
  • Mandatory traceability measures; and
  • A 1,200-foot minimum buffer zone between growing fields and feed lots with 1,000 or more animals. Previously the buffer requirement was 400 feet.

“Arizona farms take these food safety practices very seriously and are committed to doing everything possible to prevent future outbreaks,” said Arizona LGMA Food Safety Committee Administrator Teressa Lopez.

Cargill Meat Solutions, a Fort Morgan, Colo. establishment, is recalling approximately 132,606 pounds of ground beef products made from the chuck portion of the carcass that may be contaminated with Escherichia coli O26, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced today.

The ground beef items were produced and packaged on June 21, 2018. The following products are subject to recall: (Products List) [View Labels (PDF only)]

The products subject to recall bear establishment number “EST. 86R” inside the USDA mark of inspection. These items were shipped to retail locations nationwide.

On Aug. 16, 2018, FSIS was notified of an investigation of E. coli O26 illnesses. FSIS, the Centers for Disease Control and Prevention, and state public health and agriculture partners determined that raw ground beef was the probable source of the reported illnesses. The epidemiological investigation identified 17 illnesses and one death with illness onset dates ranging from July 5 to July 25, 2018.

The Cargill Meat Solutions’ ground beef products were identified following further investigation related to Recall 072-2018, conducted on Aug. 30, 2018, where ground beef products were recalled in connection with the E. coli O26 outbreak. FSIS’ traceback information indicated that case-patients consumed ground beef products purchased at various retail stores that were supplied by Cargill Meat Solutions.

E. coli O26, like the more common E. coli O157:H7, is a serovar of Shiga toxin-producing E. coli (STEC). People can become ill from STECs 2–8 days (average of 3–4 days) after exposure to the organism.

Most people infected with STEC O26 develop diarrhea (often bloody) and vomiting. Some illnesses last longer and can be more severe. Infection is usually diagnosed by testing of a stool sample. Vigorous rehydration and other supportive care is the usual treatment; antibiotic treatment is generally not recommended. Most people recover within a week, but rarely, some develop a more severe infection. Hemolytic uremic syndrome (HUS), a type of kidney failure, is common with STEC O26 infection. HUS can occur in people of any age but is most common in children under 5 years old, older adults and persons with weakened immune systems. It is marked by easy bruising, pallor and decreased urine output. Persons who experience these symptoms should seek emergency medical care immediately

FSIS is concerned that some product may be frozen and in consumers’ freezers. Consumers who have purchased these products are urged not to consume them. These products should be thrown away or returned to the place of purchase.

FSIS routinely conducts recall effectiveness checks to verify recalling firms notify their customers of the recall and that steps are taken to make certain that the product is no longer available to consumers. When available, the retail distribution list(s) will be posted on the FSIS website at www.fsis.usda.gov/recalls.

FSIS advises all consumers to safely prepare their raw meat products, including fresh and frozen, and only consume ground beef that has been cooked to a temperature of 160°F. The only way to confirm that ground beef is cooked to a temperature high enough to kill harmful bacteria is to use a food thermometer that measures internal temperature, http://1.usa.gov/1cDxcDQ. Consumers should take proper precautions when handling raw meat products. Proper hand washing after handling raw meat, poultry and eggs can greatly reduce the risk of bacterial cross-contamination to other foods and kitchen surfaces. It is important to prevent cross-contamination by washing counter tops and sinks with hot, soapy water.

Spain – Barcelona cops arrest 18 beach vendors for selling filthy E.coli riddled mojitos made from ingredients stored in bins and down drains

POLICE in Spain have arrested 18 people for selling filthy mojitos riddled with E.coli bacteria to unsuspecting tourists on the beaches.

The cocktails contained “green powders of an unknown composition which were thrown into the drink” and other ingredients which were stored in SEWERS or rubbish bins.

Anna Doherty, 19, said she became ill after succumbing to an infection while staying at the Jasmine Palace Hotel in the resort of Hurghada.

UK – Mince recalled at north-east shop after E. coli scare

Beef sold in a north-east shop has been recalled over fears it is infected with potentially deadly E. coli.

Some Costco members who purchased Aberdeen Angus minced beef from the firm’s Westhill store were alerted to the problem earlier this week.

A letter from the meat’s supplier, AK Stoddart, dated September 11, said the affected product had been sold between September 3-7.

It advised that “any product that has been frozen or further processed and not been consumed should be destroyed” but that if any had been “cooked thoroughly and to a high temperature” and eaten it “should not pose any risk to health”.

The recalled mince was also sold in Edinburgh, Glasgow, Watford and Thurrock stores.
