FSA – Cryptosporidium Cases

The Health Protection Agency (HPA) can confirm it is investigating a recent increase in cases of the gastrointestinal infection, cryptosporidiosis, across four regions in England – the North East, Yorkshire, West Midlands and East Midlands.

To date, 267 cases of cryptosporidiosis have been confirmed in the affected areas since 11 May 2012, compared to 73 cases across the four regions for the whole of May 2011.

Dr Stephen Morton, who is leading the investigation for the HPA, said: “It is usual to see an increase in cryptosporidiosis cases in the early summer, but, the increase is higher than we might expect so we are working with NHS partners, local Environmental Health Officers the Drinking Water Inspectorate and the Food Standards Agency to see if there is a common source of infection.

Illicit Shellfish Trade Risking Health of Thousands?

The illicit and highly-lucrative trade in shellfish is putting the health of many thousands of people at risk with tonnes of potentially contaminated seafood feared to be entering the food chain.

Health officials and food watchdogs are concerned that a boom in the illegal harvesting of cockles, clams and oysters for sale to restaurants and wholesalers threatens outbreaks of serious food poisoning.

The thriving seafood rustling industry, which sees unlicensed gangs of pickers target beaches and mudflats across the country to steal molluscs worth thousands of pounds at a time, has prompted a crackdown by the authorities. But with some pickers operating in organised gangs, fisheries protection bodies say they lack the resources to effectively tackle the problem.

With an annual value of at least £250m, the legitimate shellfish industry is a major part of Britain’s food economy. Properly gathered molluscs are subject to strict purification treatments, including ultra-violet light and filtering, to ensure they are fit for human consumption.

Jensen Farms – Cantelope Listeria Outbreak – Bankrupt

Jensen Farms, the southeastern Colorado cantaloupe growers who were the source of a deadly listeria outbreak last year, filed for bankruptcy Friday.

Lawsuits from the outbreak, which caused at least 32 deaths and dozens of hospitalizations, are prominent in the filing. Attorneys for Jensen Farms and for wrongful-death plaintiffs welcomed the step.

Jensen Farms did not comment.

Research- Sheep E.coli O26 and Clostridium difficile

A previous national survey of Escherichia coli in Norwegian sheep detected eae-positive (eae+) E. coli O26:H11 isolates in 16.3% (80/491) of the flocks. The purpose of the present study was to evaluate the human-pathogenic potential of these ovine isolates by comparing them with E. coli O26 isolates from humans infected in Norway. All human E. coli O26 isolates studied carried the eae gene and shared flagellar type H11. Two-thirds of the sheep flocks and 95.1% of the patients harbored isolates containing arcA allele type 2 and espK and were classified as enterohemorrhagic E. coli (EHEC) (stx positive) or EHEC-like (stx negative). These isolates were further divided into group A (EspK2 positive), associated with stx2-EDL933 and stcEO103, and group B (EspK1 positive), associated with stx1a. Although the stx genes were more frequently present in isolates from patients (46.3%) than in those from sheep flocks (5%), more than half of the ovine isolates in the EHEC/EHEC-like group had multiple-locus variable number of tandem repeat analysis (MLVA) profiles that were identical to those seen in stx-positive human O26:H11 isolates. This indicates that EHEC-like ovine isolates may be able to acquire stx-carrying bacteriophages and thereby have the possibility to cause serious illness in humans. The remaining one-third of the sheep flocks and two of the patients had isolates fulfilling the criteria for atypical enteropathogenic E. coli (aEPEC): arcA allele type 1 and espK negative (group C). The majority of these ovine isolates showed MLVA profiles not previously seen in E. coli O26:H11 isolates from humans. However, according to their virulence gene profile, the aEPEC ovine isolates should be considered potentially pathogenic for humans. In conclusion, sheep are an important reservoir of human-pathogenic E. coli O26:H11 isolates in Norway.

The prevalence of Clostridium difficile in retail meat samples has varied widely. The food supply may be a source for C. difficile infections. A total of 102 ground meat and sausage samples from 3 grocers in Pittsburgh, PA, were cultured for C. difficile. Brand A pork sausages were resampled between May 2011 and January 2012. Two out of 102 (2.0%) meat products initially sampled were positive for C. difficile; both were pork sausage from brand A from the same processing facility (facility A). On subsequent sampling of brand A products, 10/19 samples from processing facility A and 1/10 samples from 3 other facilities were positive for C. difficile. The isolates recovered were inferred ribotype 078, comprising 6 genotypes. The prevalence of C. difficile in retail meat may not be as high as previously reported in North America. When contamination occurs, it may be related to events at processing facilities.

Listeria Research – Growth Dynamics on Produce

Several Listeriosis outbreaks have been linked to the consumption of fresh or processed produce in recent years. One major determinant of the Listeriosis risk is the ability of a food to support growth of Listeria monocytogenes during storage. However, data regarding the ability to support growth of L. monocytogenes are scarce or no existing for many produce commodities. Here we synthesize the available data regarding growth behaviour of L. monocytogenes on produce, compare the growth data with Listeriosis outbreak data, and evaluate the adequacy of the data for predictive modelling. Growth rates and maximum L. monocytogenes population densities differed markedly among produce commodities, and post-harvest processing had a considerable effect on growth dynamics for certain commodities such as tomatoes. However, data scarcity prevented reliable estimation of growth rates for many commodities. Produce outbreaks seemed frequently associated with processed produce and often involved storage under suboptimal conditions (e.g., at room temperature for several hours or for several months in the refrigerator) or environmental cross-contamination after processing. However, no clear associations between high growth rates of L. monocytogenes on fresh produce and outbreaks were detected. In conclusion, produce commodities differ in the supported growth rate of L. monocytogenes, the maximum attainable L. monocytogenes population density, and possibly in the impact of post-harvest processing, but data are currently insufficient to predict growth behaviour, and the Listeriosis risk appears to be also governed by additional factors.

USDA Food Microbiology Guidelines for Laboratories

The Guidebook contains current protocols for analytical tests required by FSIS regulatory activities on meat, poultry and egg products.1 Specifically, microbiological methods are presented for sample preparation, isolation and identification of the major foodborne pathogenic microorganisms and their toxins, meat tissue species identification, and the detection of extraneous materials and antimicrobial residues. FSA – Move Away from Animal Testing for PSP

The Food Standards Agency’s shellfish monitoring programme has successfully completed a move away from tests using mice for the detection of paralytic shellfish poisoning (PSP) and lipophilic toxins in commercially harvested shellfish.

The phasing out of animal testing in the shellfish monitoring programme has been a long-term goal of the FSA. Without an approved alternative method available, tests on mice had previously been the most suitable way of detecting toxins in shellfish. However, the FSA and Cefas (Centre for Environment, Fisheries, and Aquaculture Science) have spent a number of years developing alternative testing methods that do not rely on mice.

Andrew Wadge, Chief Scientist at the Food Standards Agency, said: ‘This is a significant milestone in meeting the UK’s commitment to reduce the burden of animal testing and has been achieved after years of FSA-funded research.

‘PSP and lipophilic toxins can cause severe illness if people consume them, so it is important that our shellfish monitoring programme is as effective as possible at detecting them. In order to meet our commitment, we have had to ensure suitable alternative methods are introduced in all our statutory biotoxin testing.

Science Direct – Microbiology of Raw Milk Cheese

Cheese may be manufactured in the United States using raw milk, provided the cheese is aged for at least 60 days at temperatures not less than 35 °F (1.7 °C). There is now increased concern among regulators regarding the safety of raw milk cheese due to the potential ability of foodborne pathogens to survive the manufacturing and aging processes. In this study, 41 raw milk cheeses were obtained from retail specialty shops, farmers’ markets, and on-line sources. The cheeses were then analysed for the presence of Listeria monocytogenes, Salmonella, Escherichia coli O157:H7, Staphylococcus aureus, and Campylobacter. Aerobic plate counts (APC), coliform and yeast/mould counts were also performed. The results revealed that none of the enteric pathogens were detected in any of the samples tested. Five samples contained coliforms; two of those contained E. coli at less than 102 cfu/g. Three other cheese samples contained S. aureus. The APC and yeast-mould counts were within expected ranges. Based on the results obtained from these 41 raw milk cheeses, the 60-day aging rule for unpasteurized milk cheeses appears adequate for producing microbiologically safe products.

Science Direct – Salmonella Serotyping PCR

The most commonly used method for serotyping Salmonella spp. is based on the Kaufmann–White scheme, and is composed of serological reactions using antibodies to LPS agglutinins. The multiplex PCR used in this investigation was established by Kim et al. to serotype the 30 most common clinical Salmonella serotypes, as determined by CDC. The PCR assay consists of two five-plex reactions and a single two-plex PCR reaction, based on six genetic loci from Salmonella enterica serotype Typhimurium and four loci from S. enterica serotype Typhi. In this investigation, we further evaluated the method for serotyping Salmonella spp. using a reference collection, environmental samples collected from a Mid-Atlantic region tomato farm study, four food matrices spiked with different Salmonella serotypes and a proficiency test. The PCR assay was first evaluated using DNA isolated from pure cultures of isolates obtained from various clinical and environmental samples, and then DNA isolated from broth cultures of food matrices of “Red round” and Roma tomatoes, Romaine lettuce, green onions and Serrano peppers spiked with serotypes Newport, Typhimurium, Javiana and Saintpaul, respectively. The results showed that the PCR assay correctly serotyped Salmonella spp. from the clinical, environmental, spiked food matrices, and proficiency test samples. These findings are significant because the PCR assay was successful in the identification of Salmonella in the spiked samples in a broth culture containing other non-salmonella organism. This method may be a useful resource for the food safety community.

The impact of sodium hypochlorite and hydrogen peroxide (H2O2 at 1 and 5%) solutions on Listeria innocua in red bell peppers, total mesophiles in strawberries and total coliforms in watercress was studied. Quality attributes such as colour, firmness and pH were studied for all products; total anthocyanins content was determined for strawberries. Sensorial analyses were also carried out for all products. Results showed that H2O2 (5%) provided the highest reductions of microbial loads. Besides H2O2 (1%) had a lower impact, it was more effective than water-washings. Sodium hypochlorite solutions lead to microbial reductions comparable to water risings. In terms of quality, H2O2 (5%) was the solution with higher negative impact on products’ colour. For strawberries, such colour alterations were also detected by sensorial analyses. The anthocyanins content decreased significantly. Overall it was found that H2O2 (1%) was a good sanitizer solution, since microbial reduction was attained while quality factors did not suffer considerable alterations.
