What is safe handling of meat and seafood?
When handling raw meat and proteins (including poultry and fish), it is important for consumers to take steps to ensure safe selection, handling, storage, preparation and cooking. Adopting good practices, at home can protect from foodborne illnesses caused
by organisms such as Salmonella, Escherichia coli (e.g. E. coli O157), Campylobacter, Listeria and Norovirus.

If meat is kept clean there will be little or no contamination whether biological, physical or
chemical. Safe meat handling practices are necessary because, even though cooking may destroy bacteria, this is not the case for toxins if they have been formed.

USA – Wayne Farms, LLC, Recalls Ready-to-Eat Chicken Breast Products That May Be Undercooked

WASHINGTON, Dec. 7, 2023 – Wayne Farms, LLC, a Decatur, Ala. establishment, is recalling approximately 1,377 pounds of ready-to-eat (RTE) chicken breast products that may be undercooked, the U.S. Department of Agriculture’s Food Safety and Inspection Service (FSIS) announced today.

The RTE chicken breast items were produced on October 16, 2023. The following product is subject to recall [view labels]:

  • 9-lb. cardboard boxes containing 12 packs of 3 “CHEF’S LINE FIRE GRILLED CHICKEN BREAST” with lot codes of 3723289239002 and 3723289239003 with USE BY: 01/14/24 on the label.

The products subject to recall bear establishment number “P-20214” on the case label. These items were shipped to distributor locations in Illinois for further distribution to food service locations.

The problem was discovered when the firm received a customer complaint that the RTE chicken product appeared to be undercooked.

There have been no confirmed reports of adverse reactions due to consumption of these products. Anyone concerned about an illness should contact a healthcare provider.

USA – Cut Fruit Express Recalls “Fresh Cut Fruit Mix Containing Cantaloupe” Because of Possible Health Risk -Salmonella

Cut Fruit Express Inc. of Inver Grove Heights, MN, is recalling Caribou Coffee Fruit Mix CHPG 6.5oz, and Cut Fruit Express Brand of 6.5oz, 15oz, 16oz, 32oz packages of Fruit Mix contains Cantaloupes and Food service packages of 5lb tray, 10lb bag, 25lb Pail, because it has the potential to be contaminated with Salmonella.

Caribou Coffee Fruit Mix CHPG 6.5oz was distributed from Caribou Stores at the MSP Airport Caribou locations in the MSP Airport, Minnesota. The product comes in a clear plastic package. The USE BY DATE was 11/4/23. The remainder of the recalled “Fresh Cut Fruit Mix containing Cantaloupes” under Cut Fruit Express and food service packaging was distributed through in MN, WI and IL via retail and food service delivery. The USE BY DATES were 11/4/23, 11/5/23 and 11/6/23.

The retail product comes in with Use by Date 11/4/23, 11/5/23, 11/6/23 on the top label and food service product comes with a date label of 11/3/23 on the bag, tray or a label with use by date on the pail.

No illnesses have been reported to date in connection with this problem with our products.

Cut Fruit Express learned that their supplier is issuing a recall on Cantaloupes for potential contamination of Salmonella. Cut Fruit Express is initiating a recall on the affected product that contains the recalled Cantaloupe. The affected products were shipped between October 24th through October 26th, 2023.

  • Consumers, restaurants, retailers, and wholesalers should not eat, sell, or serve recalled cantaloupe or recalled products containing cantaloupe.
  • Some consumers freeze cantaloupe for later use. Consumers should check their freezers and throw away recalled fresh or cut cantaloupe that was frozen for later use.
  • If you cannot tell if your cantaloupe is part of the recall, do not eat or use it, throw it away.

Consumers who have purchased these products are urged to return them to the place of purchase for a full refund.

Catalonia – Alert for the presence of Listeria monocytogenes and Salmonella spp in germinated alfalfa sprouts from Spain

The Spanish Agency for Food Safety and Nutrition (AESAN) has been informed by the autonomous community of Galicia, through the  Coordinated System for Rapid Information Exchange (SCIRI),  of the presence of  Listeria monocytogenes  and Salmonella spp. in germinated alfalfa sprouts.

The data of the products involved are:

Alfalfa sprouts:

AESAN has transferred this information to the competent authorities of the autonomous communities through the SCIRI, so that the withdrawal of the affected products from marketing channels can be verified.

People who have products affected by this alert in their homes are recommended to refrain from consuming them.

If you have consumed any of the products from the affected batches and present symptoms compatible with listeriosis or salmonellosis (vomiting, diarrhea or fever), it is recommended to go to a health center.

USA/Canada – 162 with Salmonella, 62 Hospitalized, 3 Deaths in U.S. and Canada linked to Mexican Cantaloupe.

As of November 24, there have been 63 laboratory-confirmed cases of Salmonella Soahanina, Sundsvall and Oranienburg illness linked to this outbreak in the following provinces: British Columbia (12), Ontario (12), Quebec (35), Prince Edward Island (2) and Newfoundland and Labrador (2). Additional Salmonella infections are under investigation and more illnesses associated with this outbreak may be confirmed. Individuals became sick between mid-October and mid-November 2023. Seventeen individuals have been hospitalized. One death has been reported. Individuals who became ill are between 0 to 100 years of age. About half of the cases (51%) are male.

Research -Chemical Composition and Antimicrobial Activity against the Listeria monocytogenes of Essential Oils from Seven Salvia species

Abstract

In recent years, essential oils (EOs) have received interest due to their antibacterial properties. Accordingly, the present study aimed to investigate the effectiveness of the EOs obtained from seven species of Salvia on three strains of Listeria monocytogenes (two serotyped wild strains and one ATCC strain), a bacterium able to contaminate food products and cause foodborne disease in humans. The Salvia species analysed in the present study were cultivated at the Botanic Garden and Museum of the University of Pisa, and their air-dried aerial parts were subjected to hydrodistillation using a Clevenger apparatus. The obtained EOs were analysed via gas chromatography coupled with mass spectrometry for the evaluation of their chemical composition, and they were tested for their inhibitory and bactericidal activities by means of MIC and MBC. The tested Eos showed promising results, and the best outcomes were reached by S. chamaedryoides EO, showing an MIC of 1:256 and an MBC of 1:64. The predominant compounds of this EO were the sesquiterpenes caryophyllene oxide and β-caryophyllene, together with the monoterpenes bornyl acetate and borneol. These results suggest that these EOs may possibly be used in the food industry as preservatives of natural origins.

The UK’s NRL for food microbiology is responsible for official controls on specific areas of food microbiology:

  • Listeria monocytogenes
  • coagulase positive staphylococci
  • Escherichia coli (including STEC)
  • campylobacter
  • salmonella
  • antimicrobial resistance

The Food Standards Agency (FSA) awarded the UK Health Security Agency (UKHSA) these responsibilities for performing official controls to ensure the verification of compliance with feed and food law, animal health and animal welfare rules. This is described in Article 101 of Regulation (EU) No 2017/625, which is now the retained EU legislation (REUL) in the UK, UK Statutory Instrument 2019 No. 665.
