Food sold over the internet is an emerging business that also presents a concern with regard to food safety. A nationwide foodborne disease outbreak associated with sandwiches purchased from an online shop in July 2010 is reported. Consumers were telephone interviewed with a structured questionnaire and specimens were collected for etiological examination. A total of 886 consumers were successfully contacted and completed the questionnaires; 36.6% had become ill, with a median incubation period of 18 h (range, 6–66 h). The major symptoms included diarrhea (89.2%), abdominal pain (69.8%), fever (47.5%), headache (32.7%), and vomiting (17.3%). Microbiological laboratories isolated Salmonella enterica serovar Enteritidis, Salmonella Virchow, Staphylococcus aureus, Bacillus cereus, and enterotoxigenic Escherichia coli from the contaminated sandwiches, Salmonella Enteritidis and Salmonella Virchow from the patients, and Salmonella Enteritidis and Staphylococcus aureus from food handlers. Pulsed-field gel electrophoresis genotyping suggested a common origin of Salmonella bacteria recovered from the patients, food, and a food handler. Among the pathogens detected, the symptoms and incubation period indicated that Salmonella, likely of egg origin, was the probable causative agent of the outbreak. This outbreak illustrates the importance of meticulous hygiene practices during food preparation and temperature control during food shipment and the food safety challenges posed by online food–shopping services.

Almost half of all foodborne illness outbreaks that occur every year in the U.S. are associated with restaurants and delis. The CDC has released new findings and prevention tools to improve food safety in restaurants. Public health officials say that increased awareness and implementation of proper food safety in restaurants and delis may prevent many of the foodborne illness outbreaks reported every year in the U.S.

Education of restaurant workers and public health surveillance are two critical tools necessary in preventing these illnesses. Food preparation and handling practices, worker health policies, and hand-washing practices are some of the factors that are not reported during outbreaks. Carol Selman, head of the CDC’s Environmental Health Specialists Network team said, “inspectors have not had a formal system to capture and report the underlying factors that likely contribute to foodborne outbreaks or a way to inform prevention strategies and implement routine corrective measures to prevent future outbreaks.”

The boss of the Ocean Grill in Alexandra Parade, Servet Cicek, UK, has been ordered to do 250 hours of unpaid work after he admitted 10 food safety offences at North Somerset Magistrates Court.

He was also given a 12 month community, six-month curfew and told to pay costs of £2,658.92.

Council food safety officers made an unannounced inspection of the takeaway last December, the court heard, finding a build-up of dirt, grease and food throughout the premises.

Raw meats were stored next to and on top of salads and cans of drinks, allowing bacteria and blood to contaminate the food.

A south Indian restaurant has been closed until further notice until tests confirm the source of an outbreak which has claimed 19 victims in total.

The restaurant, in Leicester, has received five-star ratings in its last three council inspections – the most recent of which was just last month. It has also won awards for its service and standards and has featured on Hairy Bikers’ Best Of British BBC2 show.

The UK Food Standards Agency says the undercooking of meat products, such as burgers and sausages, continues to be a significant concern, particularly for enforcement officers responsible for assessing the safety of practices used by food businesses. 

Meat products, such as burgers, have been associated with food poisoning and they can pose a risk of illness because of the way they are prepared if they are then undercooked. For example, with whole pieces of meat, bacterial contamination is usually present on the outer surfaces. Internal (deep muscle) contamination is unlikely unless the meat has been pierced. External contamination can become spread throughout the meat during mincing, such as in the preparation of burgers, kebabs, sausages and other products.

There are indications that consumers and caterers are showing a preference for serving burgers undercooked and in a variety of settings. Local authority enforcement officers are concerned about the risk posed by such practices. A number of bacterial hazards may be associated with meat of which verocytotoxin-producing E.coli and salmonella are considered to be the most important.

Shanghai has stepped up its punishment for those found to be endangering food safety by removing ceilings for fines and allowing the death penalty for severe crimes, a high official from Shanghai’s top court said on Monday.

“The threshold for sending food-safety lawbreakers to prison has been lowered. Stiff penalties both legally and economically will ensure criminals do not dare to get involved in such crimes again,” said Zou Bihua, vice-president of the Shanghai High People’s Court, at a news conference.
