USA – Who is going to replace who is essential to food safety.

It’s who replaces who season in Washington D.C.  It happens whenever one party beats the other in presidential elections. Food safety advocates are watching these changes with rapt attention. The added change this time is that the incoming administration has an apparent common agenda known as “Make America Healthy Again.”

That agenda is about doing something about America’s Chronic Disease Epidemic, especially involving children.

The agenda is the work of Robert F. Kennedy Jr, who the president-elect nominated to be the next Secretary of Health and Human Services. If confirmed, he will replace California lawyer Xavier Becerra,

Hi All

I have taken the decision to retire and I will be finishing with this blog by the end of the week. I am passing it on to my company ALS who will be taking up the reigns, please be patient with the transfer as it is quite a big undertaking. So there may be reduced posts for a little while but it will come back.

The blog was started in 2011 and has been viewed in over 200 countries of the world in 2011 it had just under 2000 views. In 2023 that had risen to 66,000 views. It has been an interesting journey and has opened  up my eyes to and increased my knowledge of food microbiology and I hope that it has done the same for you.

For first-time hosts, or even experienced cooks, the Thanksgiving turkey can be a nerve-wracking dish to prepare once a year. The USDA Food Safety and Inspection Service (FSIS) has some tips to reduce any anxiety over cooking your turkey this year.

Thawing Turkey Safely

There are two safe ways to thaw a turkey: in the refrigerator or in cold water. Thawing a frozen turkey on the kitchen counter, in hot water, or in the garage is not safe. Even though the center of the package may still be frozen, the outer layer of the food is in the Danger Zone between 40 and 140 degrees F — a temperature range where foodborne bacteria multiply rapidly. No matter which method you use, thawing a turkey takes time.

Cooking Turkey Safely

USDA also has helpful tips on cooking turkey based on your preferred cooking method. Regardless of how your turkey is cooked, insert a food thermometer into the thickest part of the breast, the innermost part of the wing and the innermost part of the thigh to check that its internal temperature at all three spots is at 165 degrees F.
