Research -Inactivation of Salmonella in Shell Eggs by Hot Water Immersion and Its Effect on Quality

Abstract

Thermal inactivation kinetics of heat resistant strains of Salmonella Enteritidis in shell eggs processed by hot water immersion were determined and the effects of the processing on egg quality were evaluated. Shell eggs were inoculated with a composite of heat resistant Salmonella Enteritidis (SE) strains PT8 C405, 2 (FSIS #OB030832), and 6 (FSIS #OB040159). Eggs were immersed in a circulating hot water bath for various times and temperatures. Come-up time of the coldest location within the egg was 21 min. SE was reduced by 4.5 log at both hot water immersion treatments of 56.7 C for 60 min and 55.6 °C for 100 min. Decimal reduction times (D-values) at 54.4, 55.6, and 56.7 °C were 51.8, 14.6, and 9.33 min, respectively. The z-value was 3.07 °C. Following treatments that resulted in a 4.5 log reduction (56.7 °C/60 min and 55.6 °C/100 min), the surviving population of SE remained static during 4 wk of refrigerated storage. After processing under conditions resulting in 4.5 log reductions, the Haugh unit and albumen height significantly increased (P < 0.01) and yolk index significantly decreased (P < 0.05). The shell dynamic stiffness significantly increased (P < 0.05), while static compression shell strength showed no significant difference (P < 0.05). Vitelline membrane strength significantly increased (P < 0.05); although, no significant difference (P < 0.05) was observed in vitelline membrane elasticity. In summary, the hot water immersion process inactivated heat resistant SE in shell eggs by 4.5 log, but also significantly affected several egg quality characteristics.

Practical Application

Inoculated eggs with Salmonella bacteria were placed in water that was hot enough to kill the Salmonella, but not too hot to severely damage the delicate egg whites. At a temperature of 56.7 °C, 99.997% of the Salmonella was killed within 60 min. When a lower temperature was used, 55.6 °C, it took 100 min to achieve the same kill. Eggs processed using these time and temperature combinations showed some degradation of quality, but should still be acceptable. Processing shell eggs with hot water could prevent many thousands of food illnesses per year in the United States.

The competent authorities of the Marche Region, after its visit at the company Salumificio Monsano Ltd., have suspended the production activities of the plant and the sale of all types of foods, as Listeria monocytogenes is a germ contaminates the environment and, therefore, the other products of the same plant could be at risk.

It all began with Chipotle food chains back in 2015, but has persisted to affect other food establishments in 2016. The Chipotle norovirus outbreak began with improperly stored chicken and sick employees attending work. Nearly 120 persons became sick with the norovirus infection from the Chipotle Boston location alone. Since the Chipotle outbreak, more and more food outlets are emerging with the norovirus.

India -61 Ill Food Poisoning

AHMEDABAD: As many as 61 persons fell ill due to food poisoning in Saraspur on Friday. This is the third such case in the city in the past two weeks where more than 50 people became victim after having food at a wedding.
Around 61 people from groom’s side, residents of Behrampura, had feast in the ceremony. Soon, some of them developed giddiness and nausea and were rush to hospitals. Initially, five children showed symptoms of food poisoning as diarrhoea and vomiting.

At least 185 students – more than 11 percent of the student body – fell sick between Tuesday night and Thursday afternoon, dozens so dehydrated they sought emergency care.Classes were canceled, dining halls closed. School officials called off weekend events and dispatched teams to scrub and sanitize campus buildings.

Pinpointing the cause could take a week or more, according to the Montgomery County Health Department, which is spearheading the investigation.

Ursinus College said earlier today a total of 192 students reportedly to student health with symptoms of a norovirus -like illness; however, the exact etiology has not been confirmed as of this report.  Testing results could take up to a week, according to health officials.

Spain – Bar Closed – 1 Dead – Salmonella

A bar in Cadiz has been closed and an investigation launched following a suspected food poisoning outbreak, which left one person dead.

Over 65 people have reported falling ill after eating at the bar, one man, who had a history of poor illness, died shortly after visiting the establishment.

It’s believed that those who fell ill are showing symptoms of salmonella poisoning.

 

Research -USDA Poultry Standards Aim to Reduce Salmonella, Campylobacter Illnesses

Campylobacter and Salmonella are common causes of food poisoning often associated with poultry. They’re not considered legal adulterants so its okay for companies to produce and sell poultry with some amount of these bacteria on them, but until not there weren’t established limits on the the bulk of poultry products consumers buy.

In 1996,the USDA set standards for Salmonella and Campylobacter on ground poultry sand whole birds, but last week it never had standards for poultry sold in pieces such as breasts, wings and drumsticks despite the fact that poultry pieces account for 80 percent of consumer poultry purchases

USA-Blue Cheese Recall – Listeria monocytogenes

Maytag Dairy Farms in Newton announced Saturday a voluntary recall of Maytag Raw Milk Blue cheese due to possible contamination with Listeria monocytogenes, according to a press release.

The recalled product was packaged on Jan. 6 in 4-ounce wedges, 8-ounce wedges, 2-pound wheels, 4-pound wheels and 5-pound crumbles.

The lot included 896 pounds of cheese and was distributed to HoQ restaurant in Des Moines, the Bear Restaurant in Ankeny, Wine Experience in West Des Moines, Fareway in Newton, Lomar Distributing, Inc. in Des Moines or purchased directly from Maytag Dairy Farms.

The Iowa Department of Agriculture and Land Stewardship’s Dairy Products Control Bureau discovered the possible contamination during routine testing.

There have been no reported cases of Listeria monocytogenes since the product was packaged.

USA- Raw Milk -Raw Milk Cheese

A list is now available of the California retailers that received Organic Pastures Dairy Co. raw milk that has been linked to an E. coli outbreak.

The unpasteurized raw milk — which expired Jan. 23 and 26 — was recalled Feb. 4 by the Fresno-based organic dairy.

The California Department of Public Health reported Monday that four children who drank Organic Pastures whole, raw milk developed E. coli infections. At least two other children have identical strains of E. coli poisoning.

The Food and Drug Administration has temporarily suspended its cheese testing program for non-toxigenic E. coli, partly in response to complaints from proponents of raw milk and related products.

“Recently, cheesemakers have raised concerns suggesting that the FDA is applying safety criteria that may, in effect, limit the production of raw milk cheese without demonstrably benefitting public health,” agency officials said in a news release earlier this week.

Measuring non-toxigenic E. coli has long been used by FDA and other public health agencies in the U.S. and other countries to indicate fecal contamination.

USA- FDA -Update -Garden of Life Expands Voluntary Recall to Include Additional Lots of Raw Meal Products Due to Possible Salmonella Contamination

Garden of Life LLC is expanding its January 29th voluntary recall to include additional lots of its Raw Meal Organic Shake & Meal Chocolate, Original, Vanilla and Vanilla Chai products because an ingredient used in certain lots of the product has the potential to be contaminated with Salmonella Virchow. Healthy persons infected with Salmonella often experience fever, diarrhea (which may be bloody), nausea, vomiting and abdominal pain. In rare circumstances, infection with Salmonella can result in the organism getting into the bloodstream and producing more severe illnesses such as arterial infections (i.e., infected aneurysms), endocarditis and arthritis. If you have symptoms or concerns, please talk to your doctor.

Garden of Life has requested that retailers remove the lots of Raw Meal from sale and that consumers check the lot number on their Raw Meal product and return any products involved in this recall to their point of purchase for a full refund.

After extensive testing of the product and its ingredients, and working in collaboration with the U.S. Food and Drug Administration, the manufacturer, suppliers and other third-party experts, the Company has now identified the likely source of Salmonella contamination to be Organic Moringa Leaf powder from a supplier used only in Raw Meal. Because other Garden of Life products containing Moringa use different suppliers, only Raw Meal is exposed.

Following is the list of lots affected added to this recall. Consumers can find the lot codes prominently stamped on the underside of the plastic container.

No other Garden of Life products are affected by this recall.

To prevent a recurrence of this issue, Garden of Life will remove Organic Moringa powder from Raw Meal and expects new Raw Meal products to be available in stores and through online retailers within the next few weeks.
