Brazil – Action of peracetic acid in Salmonella-based biofilms on polypropylene surfaces

Portuguese

Food Safety Blog Brazil – English Salmonellaa

A study by students of the Federal University of Paraná evaluated the efficacy of peracetic acid in the removal of biofilms formed on polypropylene surfaces by three strains of Salmonella sp. With different biofilm formation capacities: strongly, moderately and weakly formed.Salmonella is considered one of the most important pathogens involved in chicken-based food contamination.

In fridges, polypropylene surfaces are usually boxes, drums, cabinets, tanks, connections, plates or tables.  After forming, the biofilm on these surfaces can become a constant form of contamination for food and utensils that make any kind of contact with it.
